Form Sandwich from ingredients listed. Lettuce and tomatoes are optional; can swap for other light greens: pickles, onions...etc (just not avocado)
Mix all ingredients together in a bowl until smooth. The batter should be thick but still pourable. If it feels too thick, add a small amount of almond milk until the consistency is right.
Heat a nonstick pan over medium-low heat and lightly coat with nonstick spray.
Pour the batter into the pan to form 2 to 4 pancakes.
Let them cook for about 2 to 3 minutes until bubbles form on the surface and the edges begin to set.
Flip the pancakes and cook for another 2 to 3 minutes until fully cooked through.
Remove from the pan and serve. Optional toppings like berries or sugar-free syrup can be added if they fit your macros.
