
1. Wash and dry the romaine lettuce thoroughly, then chop into bite-sized pieces.
2. Slice cherry tomatoes in half.
3. Peel and slice cucumber into thin rounds or half-moons.
4. Thinly slice the red onion.
5. In a large bowl, combine romaine, tomatoes, cucumber, and red onion.
6. In a small bowl, whisk together red wine vinegar and olive oil.
7. Pour dressing over the salad and toss evenly until lightly coated.
8. Season with salt and pepper to taste if desired.
9. Serve immediately for best texture.
1) Prep the vegetables
Rinse spinach and pat dry.
Dice tomato into bite-sized pieces.
2) Assemble the salad
Place spinach in a medium bowl.
Add tomato and sprinkle with pumpkin seeds.
3) Dress the salad
Drizzle olive oil and balsamic vinegar over the top.
Season lightly with salt and pepper.
4) Toss & serve
Gently toss until evenly coated. Serve fresh.
1. In a jar or container, add the oats, chia seeds, and protein powder.
2. Pour in the unsweetened vanilla almond milk. Stir well until all dry ingredients are fully mixed and no clumps remain.
3. Add blueberries on top, then stir lightly to combine.
4. Cover the container with a lid and place in the refrigerator overnight (or at least 4–6 hours) to allow the oats and chia seeds to absorb the liquid.
5. In the morning, stir again before eating. Add extra almond milk if you prefer a thinner consistency.
Quick Assembly
1. Spread spinach in a bowl.
2. Spoon chickpea base over the greens.
3. Add the halved eggs and extra whites.
4. Drizzle with olive oil and lemon juice and red wine vinegar (optional).
5. Sprinkle oregano, salt, and black pepper (as desired)
Seasonings: Lemon Juice (Tbsp) (1 Tbsp), Oregano, Dried (0.5 tsp), Red Wine Vinegar (1 tsp).
Directions
NOTE: Potatoes weighed out UNCOOKED
1) Preheat an air fryer to 400 degrees F (200 degrees C).
2) Cut each potato in half lengthwise. Cut each half in half lengthwise, and then cut each quarter in half lengthwise. You will have 16 wedges. Gather the seasonings.
3) Place potato wedges in a large bowl. Add olive oil, paprika, parsley, chili, salt, and pepper; mix until well combined.
4) Place 1/2 of the potato wedges in the basket of the air fryer and cook for 10 minutes.
5) Flip wedges with tongs and cook for an additional 5 minutes. Remove to a plate.
6) Repeat to cook the remaining wedges.
